Lisa's Christmas Pudding

There is always that one friend who can bake and create and actually make cakes look like an art work!

Unfortunately that is NOT me! However, my good friend Lisa has shared with us her secret Christmas Pudding Recipe (not so secret now)!

She makes it every year and it is absolutely delicious.

Here it is: 

-2 1/3 cup breadcrumbs (option to use gluten free)

-2/3 cup plain flour (option to use GF flour)

-teaspoon of baking soda

-teaspoon vanilla essence

-1 1/12 oranges

-1 lemon

-1 apple peeled & cored

-1 carrot grated

-half-1 cup brandy

-3 large eggs

-160gm butter

-1 teaspoon ground cinnamon

-1 teaspoon ground nutmeg

-1 teaspoon mixed spice

-1.5 cup pitted prunes

-1 cup dried apricots

-250gm mixed sultanas, peel, raisins etc

-1 table spoon treacle

-1/2 cup brown sugar (or add dates or rice malt syrup instead for low sugar option)

-1 packet glaze cherries

-optional: block of dark 70% cocoa chocolate

Boil up lemon & oranges until soft then blitz them up whole in food processor.

Make sure all other ingredients are small enough, or blended, I just chucked apple, carrot & all the dried fruit etc in thermomix to chop it all up, then mixed all together.

Once mixed, I added the citrus blend.

I greased 2 pudding pots with butter & boiled water baths in saucepans.

I boiled the puddings on a low heat all afternoon, for approx 5 hrs & topped up the water if it was getting low.

Store in the fridge.

Serve with brandy custard, icecream or cream.

Waa laa!!

I make large and mini puddings for the big day!!!
